Method

Preparing the Chicken

    Season the Chicken

    Sprinkle salt and black pepper evenly over the chicken breasts.

    Heat the Grill

    Preheat your grill to medium-high heat and brush the grates with olive oil to prevent sticking.

    Grill the Chicken

    Place the seasoned chicken breasts on the grill and cook for 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

Making the Teriyaki Sauce

    Combine Ingredients

    In a saucepan, combine soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, cornstarch, and water.

    Cook the Sauce

    Heat the saucepan over medium heat, stirring continuously until the mixture starts to boil. Once boiling, reduce the heat and let the sauce simmer for about 5 minutes until it thickens.

Cooking the Rice

    Rinse the Rice

    Rinse the rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice, 4 cups of water, and 1 tsp of salt. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

Assembling the Dish

    Glaze the Chicken

    Once the chicken is cooked, remove it from the grill and brush a generous amount of teriyaki sauce over each piece.

    Serve

    Serve the glazed chicken over a bed of rice, drizzling more teriyaki sauce on top if desired. Garnish with sliced green onions and sesame seeds if using.
