Cook the Ramen Noodles
In a pot of boiling water, add the ramen noodles and cook according to package instructions (usually about 4-5 minutes). Drain and set aside.

Prepare the Broth
In a large saucepan, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).

Add Ground Pork
Add the ground pork to the saucepan. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).

Combine Ingredients
Stir in the sesame paste, soy sauce, and chili oil, mixing well. Then pour in the chicken broth and bring to a simmer.

Add Spinach
Add spinach to the broth and let it wilt for about 2 minutes.

In bowls, add cooked ramen noodles and ladle the broth with pork and spinach over them. Top with sliced green onions and halved boiled eggs.

In a bowl, combine ground pork, finely chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Fill the Gyoza Wrappers
Take a gyoza wrapper and place about 1 tablespoon of filling in the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal tightly. Repeat until all wrappers are filled.

Cook the Gyoza
In a non-stick skillet, heat oil over medium heat. Arrange gyoza in the skillet and fry for about 2-3 minutes until the bottoms are golden brown.

Carefully add about 1/4 cup of water to the skillet and cover immediately. Steam for about 5 minutes until the water has evaporated and gyoza are cooked through.
