Soup Preparation

    Prepare the Soup Base

    In a large pot, combine water or chicken stock with white sesame paste, sriracha, chili oil, and shoyu. Whisk together until the mixture is well combined and smooth.

    Bring the mixture to a gentle boil over medium heat. Reduce the heat to low and let it simmer for about 15 minutes to allow the flavors to meld together.

Noodle Cooking

    Cook the Ramen Noodles

    In a separate pot, boil water and cook the ramen noodles according to package instructions (usually about 3-5 minutes). Drain the noodles and set aside.

Vegetable Preparation

    Prepare the Choy Sum

    In the last few minutes of the soup simmering, add the choy sum to the soup to blanch it for about 2-3 minutes until tender but still vibrant.

Assembly

    Assemble the Ramen Bowl

    In each serving bowl, place a portion of cooked ramen noodles. Ladle the hot soup over the noodles, ensuring each bowl has some of the choy sum.

    Top each bowl with slices of char siu, fish cake, chopped green onion, and half of a soft-boiled egg.
