Soup Base

Method

Preparing the Soup Base

    Prepare the Dashi

    In a medium pot, bring 4 cups of water to a boil. Add 1 tablespoon of dashi stock and stir until dissolved.

    Add Soy Sauce and Mirin

    Once the dashi is prepared, add 3 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 teaspoon of salt to the pot. Stir and let it simmer on low heat.

Cooking the Udon and Toppings

    Cook Udon Noodles

    In a separate pot, bring water to a boil and cook 2 cups of udon noodles according to package instructions (usually about 3-5 minutes). Drain and set aside.

    Prepare Tempura Batter

    In a bowl, prepare the tempura batter mix according to package instructions. Dip each shrimp into the batter until fully coated.

    Fry Shrimp Tempura

    In a frying pan, heat 2 cups of oil over medium-high heat. Carefully add the battered shrimp to the hot oil and fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

    Prepare Fish Cake and Choy Sum

    While the shrimp is frying, slice the fish cake into thin rounds and chop the choy sum into bite-sized pieces. In the last minute of frying, add the choy sum to the oil to blanch for about 30 seconds, then remove and set aside.

Assembling the Dish

    Combine All Components

    In a bowl, place a serving of udon noodles. Pour the hot shoyu soup base over the noodles. Top with 3 pieces of shrimp tempura, slices of fish cake, blanched choy sum, and sprinkle with sliced green onions.
