Method

Preparation

  1. 1

    Prepare the Ingredients

Peel and devein the shrimp. Slice the fish cake into bite-sized pieces. Finely chop the green onion, separating the white and green parts. Mince the garlic.

  2. 2

    Cook the Eggs

In a large skillet or wok, heat a bit of oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.

Cooking

  1. 3

    Stir-fry the Shrimp

In the same skillet, add a little more oil if necessary and increase the heat to high. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from the skillet and set aside.

  2. 4

Sauté the Fish Cake and Vegetables

In the same skillet, add the garlic and the white parts of the green onion. Sauté for about 30 seconds until fragrant. Add the fish cake and peas, cooking for another 2-3 minutes until the peas are heated through.

  3. 5

    Combine with Rice

Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the fish cake and peas. Return the shrimp to the skillet.

  4. 6

    Add Sauce and Finish

Pour in the soy sauce, sesame oil, salt, and pepper. Stir everything together, ensuring the rice is well coated. Add the scrambled eggs back into the skillet. Stir in the green parts of the green onion and cook for an additional 2 minutes until everything is heated through.
