Using an ice cream scoop, scoop out 1 tablespoon of each flavor of ice cream (vanilla, matcha, and strawberry) and roll them into small balls. Place the balls on a parchment-lined baking sheet and freeze for at least 1 hour or until solid.

In a microwave-safe bowl, combine sweet rice flour, granulated sugar, and water. Mix well until smooth and the sugar is dissolved.

Cook Mixture
Cover the bowl with plastic wrap and microwave the mixture on high for 1 minute. Remove from the microwave, stir, and then cover and microwave for another minute. Repeat this process until the dough is thick and sticky (about 3-4 minutes total).

Cool the Dough
Let the mochi dough cool for about 10 minutes until it's manageable to handle. Dust a clean surface with cornstarch to prevent sticking.
Assemble Mochi Ice Cream

Shape the Mochi
Take a small piece of the mochi dough (about the size of a golf ball), flatten it into a disc shape, and place an ice cream ball in the center. Pinch the edges of the mochi around the ice cream to seal it completely.

Roll the finished mochi ice cream ball in cornstarch to prevent sticking and place it back on the parchment-lined baking sheet.
