Broth

Method

Preparing the Broth

  1. 1

    Make the Miso Broth

In a large pot, combine chicken or vegetable broth, miso paste, soy sauce, mirin, minced garlic, and grated ginger. Stir well until the miso is fully dissolved.

  2. 2

    Simmer the Broth

Bring the mixture to a gentle simmer over medium heat. Allow it to simmer for about 15 minutes to let the flavors meld together.

Cooking the Noodles and Preparing Toppings

  1. 3

    Cook the Ramen Noodles

In a separate pot, bring water to a boil and cook the ramen noodles according to the package instructions (usually about 3-4 minutes). Once cooked, drain and set aside.

  2. 4

    Prepare the Toppings

Slice the char siu into thin pieces. If using a whole fish cake, slice it into rounds. Chop the choy sum and slice the green onion.

Assembling the Ramen

  1. 5

    Combine Ingredients

In a large bowl, add a portion of the cooked ramen noodles. Pour the hot miso broth over the noodles until submerged.

  2. 6

    Add Toppings

Top the ramen with sliced char siu, fish cake, choy sum, and green onion. Drizzle with sesame oil to taste.

  3. 7

    Serve

Garnish with additional green onions if desired and serve immediately while hot.
