Prepare Soup Base

    Combine Ingredients

    In a large pot, combine the chicken broth, shoyu (soy sauce), minced garlic, minced ginger, chili oil, and sesame oil. Bring to a simmer over medium heat.

Cook Mabo Tofu

    Brown Ground Pork

    Add the ground pork to the pot and cook until browned, about 5-7 minutes, stirring frequently.

    Add Tofu and Sauce

    Gently fold in the diced tofu and chili garlic sauce. Simmer for an additional 5 minutes to allow the flavors to meld.

    Thicken Sauce

    In a small bowl, mix the cornstarch with water to create a slurry. Slowly add this to the pot, stirring continuously until the sauce thickens, about 2 minutes.

Cook Noodles and Assemble

    Prepare Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside.

    Assemble Bowls

    To serve, place a portion of ramen noodles in each bowl. Ladle the hot Mabo Tofu soup over the noodles, and top with soft boiled eggs, sliced green onions, nori strips, and a sprinkle of sesame seeds.
