    Prepare the Napa Cabbage

    Cut the Napa cabbage in half lengthwise, then into quarters. Remove the core and chop into bite-sized pieces. Rinse the pieces in cold water and drain.

    Salt the Cabbage

    In a large bowl, sprinkle the chopped Napa cabbage with salt. Toss to coat evenly and let sit for 2 hours, tossing occasionally.

    Prepare the Carrots and Green Onions

    While the cabbage is salting, julienne the carrots and chop the green onions. Set aside.

Mixing

    Prepare the Kim Chee Paste

    In a food processor, combine garlic cloves, ginger, fish sauce, sugar, and Korean red pepper flakes. Blend until smooth.

    Combine Ingredients

    In a large mixing bowl, combine the salted cabbage, julienned carrots, chopped green onions, and the kim chee paste. Mix thoroughly with your hands (wear gloves to prevent irritation) until all vegetables are well coated.

Fermentation

    Pack the Kim Chee

    Transfer the mixture into a clean glass jar, pressing down firmly to eliminate air pockets. Leave about an inch of space at the top.

    Ferment

    Seal the jar with a lid and let it sit at room temperature for 1-5 days, depending on your taste preference. Check daily and press down on the vegetables if necessary.
