Make the Simple Syrup
In a small saucepan, combine equal parts sugar and water (1 cup each). Heat over medium heat, stirring until the sugar is completely dissolved. Allow to cool before using.

Prepare the Fruit Puree
Choose your desired fruit. Wash, peel, and chop the fruit as necessary. Blend the fruit in a blender or food processor until smooth. If desired, strain through a fine-mesh sieve to remove seeds or pulp.

In a large pitcher, combine the prepared fruit puree with the simple syrup and mix well. If desired, add a drop of food coloring for a more vibrant look.

Slowly add the sparkling water to the fruit mixture, gently stirring to combine. Be careful not to agitate too much to preserve the fizz.
