Preparing the Soup Base

Combine Ingredients
In a large pot, heat the sesame oil over medium heat. Add the miso paste and stir for 1-2 minutes until it begins to soften.

Add Broth
Pour in the vegetable broth and soy sauce. Stir well to combine and bring to a gentle simmer.
Cooking the Ramen

Cook the Ramen Noodles
In a separate pot, boil water and cook the ramen noodles according to package instructions. Usually, this takes about 3-4 minutes.

Prepare the Toppings
While the noodles are cooking, prepare the toppings: soft-boil the eggs (boil for 6-7 minutes, then cool in ice water), slice the fish cake, chop the choy sum, and cut the nori into strips.
Assembling the Ramen

Serve the Ramen
Once the noodles are cooked, drain them and divide between two bowls. Pour the hot miso soup base over the noodles.

Top each bowl with choy sum, corn, fish cake slices, soft-boiled eggs (halved), nori strips, and sprinkle with green onions.
