Curry Sauce Preparation

    Cook the Aromatics

    In a medium saucepan over medium heat, add a splash of vegetable oil. Once hot, add the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant.

    Add Curry Powder

    Stir in the curry powder and cook for another minute to toast the spices.

    Add Liquids

    Pour in the coconut milk and vegetable broth. Stir well to combine.

    Season the Sauce

    Add the soy sauce, salt, and black pepper to taste. Bring the sauce to a simmer and cook for about 10 minutes, allowing the flavors to meld.

Udon and Toppings Preparation

    Cook Udon Noodles

    In a large pot of boiling water, cook the udon noodles according to package instructions (usually about 5-7 minutes). Drain and set aside.

    Prepare Choy Sum

    In the same pot, briefly blanch the choy sum in boiling water for 1-2 minutes until tender but still bright green. Drain and set aside.

    Assemble the Bowl

    In serving bowls, place a portion of the cooked udon noodles at the bottom. Pour the hot curry sauce over the noodles.

    Add Toppings

    Top the curry udon with char siu slices, fish cake, blanched choy sum, and sliced green onions.

    Serve hot, adjusting seasoning if necessary, and enjoy your delicious curry udon!
