    Prepare the Vegetables

    Peel and chop the onion, carrot, and potato into bite-sized pieces. Mince the garlic and grate the ginger.

    Cook the Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Carrots and Potatoes

    Stir in the chopped carrot and potato, cooking for another 5 minutes, stirring occasionally.

    Add Water and Curry Roux

    Pour in the 4 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low and add the Japanese curry roux, stirring until fully dissolved.

    Simmer

    Cover the pot and let the curry simmer for about 20-30 minutes, or until the vegetables are tender. Stir occasionally and add salt to taste.

Rice Directions

    Rinse the Rice

    Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. If using a pot, bring the water to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

    Fluff the Rice

    Once cooked, remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork.
