Method
Preparation of Soup
- 1
Prepare the Base
In a large pot, combine 4 cups of chicken broth, 2 tablespoons of golden curry sauce mix, 1 tablespoon of soy sauce, 2 minced garlic cloves, and 1 tablespoon of minced ginger. Stir well to combine.
- 2
Simmer the Soup
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld together.
Cooking Noodles and Toppings
- 3
Cook the Ramen Noodles
In a separate pot, bring water to a boil. Add 2 packs of ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.
- 4
Prepare the Choy Sum
In the same water used for the noodles, briefly blanch the choy sum for about 1-2 minutes until tender but still crisp. Remove and set aside.
- 5
Slice the Toppings
Thinly slice the char siu and fish cake.
Assembly
- 6
Assemble the Ramen Bowl
Divide the cooked ramen noodles into two bowls. Pour the curry soup over the noodles.
- 7
Add Toppings
Top each bowl with 1 piece of char siu, half of the fish cake, blanched choy sum, and sprinkle with chopped green onions. Drizzle a teaspoon of sesame oil over the top for added flavor.
