Preparing the Chicken Katsu

Prepare the Chicken
Start by placing the chicken breasts between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to about 1/2 inch thickness.

Season the Chicken
Remove the plastic wrap and season both sides of the chicken breasts with salt and black pepper.

Set Up Breading Station
In three shallow dishes, place the flour in the first dish, whisk the eggs in the second, and place the panko breadcrumbs in the third.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip it into the beaten eggs, allowing excess to drip off, and finally coat with panko breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and let drain on a paper towel.

In a small bowl, mix together the ketchup, soy sauce, sugar, Worcestershire sauce, and Dijon mustard until well combined.

Slice the chicken katsu into strips and serve with the tonkatsu sauce on the side for dipping.
