Preparation
- 1
Cook the Chicken
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken breast and cook until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
- 2
Cook the Fish Cake
In the same pan, add another tablespoon of vegetable oil. Add the sliced fish cake and sauté for 3-4 minutes until slightly crispy. Remove and set aside with the chicken.
- 3
Prepare Vegetables
Add the chopped green onions and frozen peas to the pan. Stir-fry for about 2-3 minutes until the peas are heated through and the green onions are tender.
Cooking
- 4
Combine Ingredients
Add the cooked rice to the pan with the vegetables. Stir well to combine and break up any clumps of rice.
- 5
Season the Rice
Pour in the soy sauce, sesame oil, salt, and black pepper. Stir-fry for an additional 3-5 minutes until everything is heated through and well mixed.
- 6
Add Chicken and Fish Cake
Return the cooked chicken and fish cake to the pan. Stir-fry for another 2-3 minutes until all ingredients are combined and heated through.
Serving
- 7
Serve the Dish
Remove the fried rice from heat and serve hot. Optionally, garnish with additional chopped green onions.
