Preparation

    Prepare the Chicken

    Cut the chicken breast into thin strips and set aside.

    Chop the Vegetables

    Julienne the carrot, finely chop the ground onion, and shred the cabbage. Slice the green onion diagonally.

    Prepare the Noodles

    If using dried yakisoba noodles, cook them according to package instructions, drain, and set aside.

Cooking

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Cook the Chicken

    Add the chicken strips to the skillet and stir-fry until they are cooked through and lightly browned, about 5-7 minutes.

    Add the Vegetables

    Add the carrot, ground onion, and cabbage to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender.

    Combine the Noodles

    Add the cooked yakisoba noodles to the skillet, tossing to combine with the chicken and vegetables.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, ketchup, mirin, and sugar.

    Pour the sauce over the noodle mixture in the skillet and stir-fry for another 2-3 minutes until everything is well coated and heated through.

    Finish with Green Onions

    Add the sliced green onions and toss everything together for an additional minute.
