    Prepare the Ingredients

    Chop the char siu into small pieces, slice the fish cake into thin rounds, and finely chop the green onions, separating the white parts from the green parts. Set aside.

    Prepare the Rice

    Ensure that the cooked jasmine rice is cold and separated to prevent clumping. If using leftover rice, break up any clumps with your hands.

    Scramble the Eggs

    Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat. Beat the eggs in a bowl, pour them into the pan, and scramble until fully cooked. Remove from the pan and set aside.

    Stir-Fry the Ingredients

    In the same pan, add the remaining tablespoon of vegetable oil and increase the heat to high. Add the white parts of the green onions, char siu, and fish cake. Stir-fry for about 3-4 minutes until heated through.

    Add Rice and Peas

    Add the cold jasmine rice and frozen peas to the pan. Stir-fry for another 3-4 minutes, breaking up any rice clumps and ensuring everything is well mixed.

    Add Sauce and Eggs

    Pour in the soy sauce, oyster sauce, sesame oil, and white pepper. Toss everything together for 2 minutes to allow the flavors to meld. Finally, add the scrambled eggs and toss to combine.

    Garnish and Serve

    Remove from heat and garnish with the green parts of the chopped green onions. Serve hot.
