Prepare marinade

In a bowl, whisk together beef broth, soy sauce, brown sugar, rice vinegar, Worcestershire sauce, minced garlic, grated ginger, sesame oil and cracked black pepper until sugar dissolves and mixture is homogeneous.

Trim and sear beef

Pat the chuck roast dry with paper towels and season lightly with salt. Heat 1 tablespoon vegetable oil in a large heavy-bottomed skillet over medium-high heat. When hot, sear the roast 2–3 minutes per side until a deep brown crust forms (this adds flavor). Transfer the seared roast to a slow cooker or a heavy Dutch oven.

Cook low and slow

Pour the prepared marinade over the roast so the liquid comes about halfway up the sides of the meat. Cover and cook: - Slow cooker: low for 8 hours or high for 4–5 hours. - Dutch oven (oven method): cover and braise at 150°C (300°F) for 3–3.5 hours, or until beef is fork-tender. The meat should shred easily with two forks.

Shred and reduce sauce

When the beef is fork-tender, remove it to a cutting board and reserve the cooking liquid. Using two forks, shred the beef into bite-sized pieces. Pour the cooking liquid into a saucepan and simmer over medium-high heat until reduced to about 1/2–3/4 cup (concentrated sauce), about 8–12 minutes. Taste and adjust seasoning with salt if needed. Toss shredded beef with 2–3 tablespoons of the reduced sauce to coat; reserve remaining sauce for serving.

Cook rice

While the beef is finishing, rinse the rice under cold water until the water runs clear. Combine the rinsed rice and 2.25 cups water in a medium saucepan. Add 1 teaspoon neutral oil or butter and a pinch (about 1/8 tsp) of salt. Bring to a boil over medium-high heat, then reduce to a low simmer, cover, and cook 15–18 minutes until water is absorbed and rice is tender. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork and optionally stir in 1 teaspoon rice vinegar for brightness.

Make spicy sauce

In a small bowl, whisk together gochujang, honey, soy sauce and 2 teaspoons water until smooth. Taste and adjust — add more honey to mellow or more water to thin. Keep at room temperature until ready to serve.

Prepare vegetables

Julienne the carrots and thinly slice the red bell pepper. Thinly slice the scallions separating whites and greens. If using quick-pickles or pickled cucumber, drain well. Toast sesame seeds in a dry skillet over medium heat, stirring, until fragrant and lightly golden, about 2 minutes; remove from heat.

Optional quick sauté

If you prefer warm vegetables, heat a small skillet over medium heat with 1 teaspoon oil. Quickly sauté carrots and bell pepper 2–3 minutes until slightly tender-crisp, season with a pinch of salt, then remove.

Assemble & Serve

Divide the cooked rice among 4 bowls (about 1/2 cup cooked rice per serving as base, more if desired).

Top each bowl with an even portion of shredded beef (about 300 g total yields ~150–200 g per serving depending on appetite) and drizzle additional reduced cooking sauce to taste.

Arrange carrots, bell pepper, scallion whites and pickles (if using) around the beef. Garnish with scallion greens, cilantro, toasted sesame seeds and a lime wedge. Spoon the gochujang-honey sauce on top or serve on the side for people to add as desired.

Serve immediately. Recommend squeezing lime over the bowl and adding extra sauce for heat and sweetness balance.
