Select and prep plantains

Choose 3 ripe plantains with black or dark brown spots on the peel — the riper they are, the sweeter the result. Rinse and dry them. Cut off both ends with a knife and score the peel lengthwise in 2–3 places; peel the skin away and discard.

Slice plantains

Slice each peeled plantain diagonally into 1/2-inch (about 1.2 cm) thick slices. Diagonal slices create more surface area for caramelization. Alternatively, cut into lengthwise halves for larger pieces.

Heat oil

Pour about 1 cup oil into a heavy skillet (cast-iron or stainless) — enough to come ~1/4 inch up the side. Heat over medium to medium-high until shimmering but not smoking (about 325–350°F / 160–175°C). To test, drop one slice: it should sizzle gently and float.

Fry plantain slices

Working in a single layer and in batches (do not overcrowd), place slices flat in the hot oil. Fry 2–3 minutes without moving until the underside is golden and caramelized, then flip and fry another 1.5–2 minutes until deeply golden brown and tender. Adjust heat as needed — lower if browning too quickly before tenderizing.

Drain and season

Use a slotted spatula to transfer fried plantains to a plate lined with paper towels to drain. While still hot, lightly sprinkle with 1/4–1/2 tsp of salt (portion from the 1 tsp total) to enhance flavor.

Butter glaze (optional)

For an extra glossy, richer finish, return the drained plantains to the warm skillet off the heat. Add 1 tablespoon butter and 1 teaspoon brown sugar; toss gently until butter melts and sugar dissolves, coating the plantains. Squeeze 1 teaspoon lime or lemon juice over them and toss once more, then remove to serving plate.

Serve

Serve hot as a side (with beans, rice, or meat) or as a sweet snack/dessert. Leftovers can be reheated in a hot skillet for 1–2 minutes to restore crisp edges.
