Prepare the Grits

Cook the Grits

In a pot, bring 4 cups of water to a boil. Add the heirloom grits and salt, reduce heat to low, and simmer, stirring occasionally, for about 20-25 minutes until the grits are creamy.

Add Cheese and Butter

Once the grits are cooked, stir in the butter and shredded white cheddar cheese until melted and smooth. Keep warm.

Cook the Shrimp

Sauté the Prosciutto

In a skillet over medium heat, add the diced prosciutto and cook until crispy. Remove and set aside.

Sauté the Shrimp

In the same skillet, add olive oil, minced garlic, and Cajun seasoning. Add the shrimp and cook for about 3-4 minutes, until they turn pink and are cooked through. Remove from heat.

Assembly

Plate the Dish

Spoon the creamy heirloom grits onto plates, top with the sautéed shrimp, sprinkle crispy prosciutto, and garnish with chili threads and fresh parsley.
