    In a large skillet over medium heat, add olive oil. Once hot, add the breakfast sausage, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

    Add the chopped onion, red and yellow bell peppers to the skillet. Sauté for an additional 5 minutes until the vegetables are softened.

    Incorporate Hash Browns

    Stir in the shredded potato hash browns and cook for another 5-7 minutes, stirring occasionally until the hash browns are crispy and golden.

    Season the Mixture

    Season the mixture with salt and black pepper to taste. Remove from heat and stir in the chopped green onions.

    Assemble the Burritos

    Warm the flour tortillas in a dry skillet or microwave for a few seconds. Place a generous portion of the filling in the center of each tortilla, sprinkle with white cheddar cheese, and roll them up tightly.
