Preparation

Mini Belgian Waffles

1. Prepare the waffle batter

In a mixing bowl, whisk together 1 cup all-purpose flour, 1 tablespoon sugar, 1 teaspoon baking powder, 1/4 teaspoon baking soda, and a pinch of salt. In another bowl, whisk 1 egg, 1 cup buttermilk, 2 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract. Combine the wet and dry ingredients gently, being careful not to overmix.

2. Preheat a mini waffle maker according to manufacturer instructions. Lightly grease the waffle maker with cooking spray or melted butter.

3. Pour about 2–3 tablespoons of batter into each mold or section of the waffle maker (adjust depending on your mini waffle maker size). Cook the waffles until golden brown and cooked through, about 3-4 minutes per batch.

4. Remove waffles and place on a serving plate. Dust lightly with powdered sugar using a fine mesh sieve or sifter.

Scrambled Eggs

5. Crack 2 eggs into a bowl, add a pinch of salt and pepper, and whisk until well combined.

6. Heat a non-stick skillet over medium-low heat and add 1 teaspoon butter. Once the butter is melted, pour in the eggs.

7. Let the eggs sit undisturbed for a few seconds, then stir gently with a spatula, scraping from the edges to the center, until soft curds form and the eggs are just cooked through. Remove from heat immediately to avoid overcooking.

Seasonal Fruit

8. Wash and prepare a selection of seasonal fruits such as strawberries, blueberries, apple slices, banana slices, or grapes. Cut into bite-sized pieces suitable for kids.

9. Group the fruit together on the serving plate with waffles and eggs.

Maple Syrup

10. Serve 100% Organic Grade A Pure Maple Syrup in a small ramekin or cup alongside the waffles for dipping or pouring.

Healthy Side Option

11. For Vanilla Yogurt Option

Spoon 1/2 cup of local vanilla yogurt into a small bowl or ramekin. Optionally garnish with a few slices of fruit or a sprinkle of granola.

12. For Unsweetened Apple Sauce Option

Spoon 1/2 cup of unsweetened apple sauce (made with 100% American grown apples) into a small bowl or ramekin. Optionally garnish with a dash of cinnamon.

Plating and Serving

13. Arrange 2 prepared mini Belgian waffles on a plate. Place the scrambled eggs and seasonal fruit on the side. Include the small cup of maple syrup and the selected healthy side (yogurt or apple sauce). Serve immediately while the waffles and eggs are warm.
