Shrimp Preparation

    Season and Cook Shrimp

    In a bowl, toss the shrimp with blackening seasoning. Heat olive oil in a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Fried Green Tomatoes

    Prepare and Fry Tomatoes

    Dip each slice of green tomato in buttermilk, then coat in cornmeal mixed with salt. Heat oil in a frying pan over medium heat and fry the tomatoes for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Stone Ground Grits

    Cook Grits

    In a pot, bring water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally. In a separate pan, cook diced bacon until crispy, then add to the grits along with heavy cream and chives. Stir to combine.

Roasted Corn Emulsion

    Make Corn Emulsion

    In a saucepan, combine corn kernels and vegetable stock. Simmer until corn is tender, about 10 minutes. Transfer to a blender, add butter, salt, and pepper. Blend until smooth and creamy.

Assembly

    Plate the Dish

    On a plate, serve a generous scoop of stone ground grits, top with blackened shrimp, add fried green tomatoes on the side, and drizzle with roasted corn emulsion.
