    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the stone ground grits and reduce the heat to low. Cook, stirring occasionally, until thickened, about 20-25 minutes. Stir in diced bacon, diced tomato, and chives. Season with salt and pepper to taste.

    Cook the Steak

    Season the flat iron steak with salt and black pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before slicing.

    Prepare the Asparagus

    In a separate pan, steam or sauté the asparagus until tender, about 4-5 minutes. Season with salt and pepper.

    Fry Green Tomatoes

    Slice the green tomatoes into 1/2 inch thick rounds. Dredge them in flour, then dip in beaten egg, and coat with cornmeal. Fry in hot oil until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Assemble the Dish

    On a plate, place the fried green tomatoes as the base. Top with the sliced flat iron steak, jumbo lump crab meat, and asparagus. Drizzle with hollandaise sauce and sprinkle Old Bay seasoning on top. Serve with stone ground grits on the side.
