Prepare the Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients
In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until fully mixed.

Mix Together
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

Cook the Pancakes/Waffles
For pancakes, heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. For mini waffles, preheat the waffle iron and follow the manufacturer's instructions for batter amount and cooking time.

Serve warm with butter and maple syrup on top.
