    Prepare the Shrimp

    In a bowl, combine the buttermilk with cayenne pepper, garlic powder, salt, and black pepper. Add the bay shrimp, ensuring they are well coated. Let marinate in the refrigerator for at least 30 minutes.

    Set Up Breading Station

    In one bowl, place the cornmeal. In another bowl, beat the eggs. In a third bowl, place the all-purpose flour. This will be used for breading the shrimp.

    Bread the Shrimp

    Remove the shrimp from the marinade. Dredge them first in flour, then dip in beaten eggs, and finally coat with cornmeal. Set aside.

    Fry the Shrimp

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Po' Boys

    Slice the French bread rolls in half. Spread a generous amount of remoulade sauce on the inside of both halves. Layer with shredded lettuce, sliced tomatoes, and the fried bay shrimp. Top with more remoulade sauce to taste, then close the sandwich.

    Serve the Bay-O Po' Boys immediately with extra remoulade on the side and enjoy!
