In a medium bowl combine 1 3/4 cups graham cracker crumbs, 1/4 cup granulated sugar and 1/4 tsp fine salt. Stir to combine.

Add 1/2 cup melted unsalted butter and mix until crumbs are evenly moistened and hold together when pressed.

Press the crumb mixture evenly into the bottom and up the sides of the tart pan (about 1/4" thick). Use the bottom of a measuring cup to compact the crust firmly.

Bake crust 10–12 minutes until fragrant and set. Remove from oven and cool on a rack while preparing mousse. If crust domes slightly, gently press down while warm to even it.
Pfeffernüsse spiced mousse

Prepare chocolate base (ganache-style)
Place 8 oz finely chopped dark chocolate in a heatproof bowl. In a small saucepan, combine 1/2 cup whole milk and 1/2 cup heavy cream and heat until it barely simmers (small bubbles at the edge). Remove from heat and pour over the chocolate. Let sit 1 minute, then whisk gently until smooth. Stir in 1 tbsp light corn syrup or honey and optional 1 tbsp butter for shine. Set aside to cool slightly.

Infuse spice into egg-sugar mixture
In a small saucepan whisk together 3 egg yolks and 1/4 cup granulated sugar until blended. Add the spices: 1 tsp ground cinnamon, 1/2 tsp ground allspice, 1/4 tsp ground cloves, 1/4 tsp ground black pepper, 1/4 tsp ground cardamom (if using) and 1/4 tsp kosher salt. Whisk in the cooled chocolate mixture 1–2 tablespoons at a time to temper the yolks, then pour the tempered yolk mixture back into the chocolate bowl and whisk until fully combined and glossy.

Cook (optional but recommended for safety)
Return the combined chocolate-yolk mixture to the saucepan and cook over low heat, stirring constantly, until the mixture registers 160°F (71°C) on an instant-read thermometer or thickens slightly and coats the back of a spoon. Do not boil. Remove from heat and strain through a fine-mesh sieve into a clean bowl to remove any cooked bits. Cool to room temperature, stirring occasionally so it remains smooth.

Whip cream and fold
In a chilled bowl whip 1 cup heavy cream with 1/2 tsp vanilla extract to soft peaks. Reserve about 2 tablespoons of whipped cream for top decoration if desired. Gently fold one-third of the whipped cream into the cooled chocolate-spice base to loosen it, then fold in the remaining cream in two additions until homogeneous and light, taking care not to overfold and deflate the mousse.

Taste and adjust: if the mousse needs more spice brightness, gently fold a pinch more cinnamon or a few drops of vanilla. The mousse should be airy but stable enough to set in the crust.

Pour the finished spiced mousse into the cooled graham crust and smooth the top with an offset spatula. Tap the pan gently on the counter to remove any air pockets.

Chill tart in the refrigerator at least 4 hours, preferably overnight, until the mousse is fully set.
Finish / garnish

Just before serving dust the tart lightly with 1 tablespoon powdered sugar and sprinkle 1/4 cup crushed Pfeffernüsse or gingerbread cookies around the edge or over the center for texture.

Run a thin knife around the tart pan edge to loosen, then remove the removable rim and transfer tart to a serving plate. Slice with a hot, dry knife for clean slices.
