Tartlet shells

If your ready-made shells are unbaked or need crisping, preheat the oven to 350°F (175°C). Arrange shells on a baking sheet and brush lightly inside with melted butter if desired. Bake 5–7 minutes until lightly golden and crisp. Cool completely on a rack. If already crisp, simply inspect and cool if warm.

Make and season the filling
In a medium bowl, combine 1 cup crème fraîche, 1 teaspoon fresh lemon juice, 1/2 teaspoon grated lemon zest, 2 tablespoons finely chopped chives, 1/4 teaspoon fine sea salt, and 1/8 teaspoon freshly ground black pepper. Stir gently until homogeneous. Taste and adjust seasoning: add up to another 1/4 teaspoon salt or a few drops more lemon juice if desired. Refrigerate for at least 15 minutes to let flavors marry; this also firms the filling slightly for easier piping.

Assemble the base
Transfer the chilled crème fraîche mixture to a piping bag fitted with a plain round tip (about 1/2 inch) or use a small spoon. Pipe or spoon approximately 1 tablespoon of the crème fraîche into the center of each cooled tartlet shell, creating a small mound that will support the caviar. Smooth slightly with the back of a spoon if needed.

Handle caviar gently and keep it cold until ready to serve. Using a small spoon (mother-of-pearl or non-metal preferred to avoid metallic taste), place about 1/2 teaspoon to 3/4 teaspoon of caviar on top of each crème fraîche mound. Adjust amount to preference; total 4 oz caviar should be enough for 12 tartlets at ~1/2 tsp per tartlet.

If using cured egg yolk: grate or shave a small amount of cured yolk over each tartlet (use a microplane or fine grater). One cured yolk should be enough to give a light dusting across 12 tartlets; add more to taste.

Garnish each tartlet with a few snips of fresh chives (a light sprinkle from the extra 1 tablespoon) and, if using, a tiny microgreen or herb leaf on the edge. Finish with a very light crack of black pepper only if desired (caviar is delicate).

Arrange finished tartlets on a chilled serving platter. Keep refrigerated and serve immediately — best within 30 minutes of adding caviar to preserve texture and flavor. Leftover tartlets (without caviar) can be stored covered in the refrigerator for up to 24 hours; add caviar just before serving.
