Citrus-Almond Génoise
Prepare and heat oven
Preheat the oven to 180°C (350°F). Line a 33 x 23 cm (13 x 9 in) rectangular baking tray with parchment paper, letting the paper hang over the long sides for easy removal.
Whip eggs and sugar
In a heatproof bowl set over (not in) simmering water, whisk together the 6 whole eggs, 150 g granulated sugar, vanilla extract and a pinch of salt. Whisk constantly until the mixture reaches 38–40°C (100–104°F) and the sugar is dissolved (about 3–4 minutes). Remove from heat and continue whipping with a stand mixer or electric hand mixer on high speed until ribbon stage — the batter should be pale, tripled in volume and fall back in ribbons (about 6–8 minutes).
Fold dry ingredients
Sift the 90 g all-purpose flour over the whipped eggs, add the 60 g almond flour, orange and lemon zest. Gently fold in two additions using a rubber spatula to preserve air. Do not overmix.
Incorporate butter
Temper the 60 g melted butter by folding a tablespoon of the sponge batter into the butter to loosen. Then fold the butter mixture gently into the batter until homogeneous.
Bake
Spread the batter evenly in the prepared tray, smoothing the top with an offset spatula. Bake 12–14 minutes, or until the top is springy and a toothpick comes out clean. Avoid overbaking to keep a moist sponge.
Cool and trim
Let the génoise cool for 5 minutes in the tray, then invert onto a rack or clean board, peel off parchment and cool completely. Once cooled, trim the cake into three even rectangles approximately 32 x 11 cm (12.5 x 4.5 in) each (or into the sizes you need for layered assembly). Reserve.
Cranberry Compote
Combine 300 g cranberries, 90 g sugar, 80 ml orange juice, orange zest and 1 tbsp lemon juice in a saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, and cook until the berries burst and the mixture thickens to a jammy consistency, about 10–12 minutes.
Taste and adjust sweetness. If you want a smoother compote, mash with a spoon or pulse briefly with an immersion blender. Cool completely before using; it will thicken more as it cools. Reserve about 200–220 g for layers (you may have some extra).
Cranberry Gelée
Bloom gelatin
Place 20 ml cold water in a small bowl and sprinkle 2 tsp powdered gelatin over the surface. Let bloom 5 minutes.
Meanwhile, heat 150 ml cranberry juice with 40 g sugar and 1 tsp lemon juice in a small saucepan just to the point of simmering. Remove from heat, add the bloomed gelatin and stir until dissolved. Allow the gelée to cool but remain pourable (room temperature). Pour the gelée into a shallow container to set slightly — it should be a loose gel you can spoon or pour over a layer without soaking the sponge. Chill briefly if needed, then bring to room temperature before assembly.
Coffee-Orange Buttercream
Make yolk sabayon
Combine 4 egg yolks and 60 g granulated sugar in a heatproof bowl set over simmering water. Whisk constantly until the mixture reaches about 71°C (160°F) and thickens into a sabayon (about 4–6 minutes). Remove from heat and let cool to room temperature, stirring occasionally.
Combine coffee and orange
Dissolve 45 ml strong brewed espresso (cooled to room temperature) into the cooled sabayon. Add the 1 tbsp orange zest and incorporate fully.
Emulsify buttercream
With the mixer on low, slowly stream the sabayon-coffee mixture into the butter-sugar mixture, increase speed to medium and whip until smooth, silky and pipeable (3–5 minutes). If the buttercream looks curdled, continue beating or chill briefly and rewhip. Adjust flavor: add a teaspoon of espresso or orange liqueur if desired. Keep at room temperature for assembly; if too soft, chill briefly and re-whip to ideal consistency.
Simple Syrup (for soaking)
Combine 100 ml water and 60 g sugar in a small saucepan and bring to a simmer until sugar dissolves. Remove from heat and stir in 30 ml espresso and 15 ml orange liqueur if using. Cool to room temperature. Transfer to a pastry brush-ready container.
Assembly / Finishing
Layer 1 — Bottom sponge
Place the first trimmed génoise rectangle on a flat tray or board (parchment underneath for easy transfer). Lightly brush the top with simple syrup (use about 2–3 tbsp per layer) but do not soak — just enough to flavor and moisten.
Add buttercream and compote
Pipe or spread a thin, even layer (about 6–8 mm) of coffee-orange buttercream over the soaked sponge. Smooth the buttercream, then dollop and spread an even layer (about 3–4 mm) of cranberry compote on top. Try to stay 1 cm inside the edges to prevent spilling during assembly.
Layer 2 — Middle sponge
Place the second sponge rectangle on top, press gently to level. Brush with simple syrup. Spread a slightly thicker layer (8–10 mm) of buttercream and smooth. Pour or spoon a thin layer of the slightly set cranberry gelée over the buttercream (this will create a glossy, slightly firm contrast). Chill 10–15 minutes to help set the gelée if needed.
Layer 3 — Top sponge and glaze
Place the final sponge on top, brush lightly with syrup. Spread a thin final layer (3–4 mm) of buttercream and smooth carefully. Chill the assembled cake for 20–30 minutes to firm slightly for clean trimming.
Trim and coat
Trim edges with a sharp serrated knife to create clean, even sides. Optionally, coat the sides with a thin 'crêpe' layer of buttercream for neatness. Chill briefly to set.
Chocolate glaze
Melt 100 g chopped dark chocolate with 15 g butter in a heatproof bowl over simmering water or in short microwaves, stirring until smooth. Let cool slightly to thick but pourable consistency. Pour over the top of the assembled cake to create a smooth glossy top. Smooth with an offset spatula and chill to set the glaze.
Finish and serve
Decorate with a few shards of freeze-dried or fresh cranberries and a light dusting of orange zest if desired. Chill until the buttercream and gelée are firm (at least 30 minutes). For clean slices, use a hot, dry knife wiped between cuts. Serve chilled or at cool room temperature.
