Rinse the Brazilian rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water, a pinch of salt, and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until the rice is tender.

Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and bell pepper. Sauté for about 5 minutes until softened.

Cooking the Stew

Combine Ingredients

Add diced tomatoes, coconut milk, fish stock, paprika, salt, and black pepper to the pot. Stir well and bring to a simmer.

Add Seafood

Once the stew is simmering, add the shrimp and mussels. Cook for about 5-7 minutes until the shrimp are opaque and the mussels have opened.

Finish with Lime and Cilantro

Stir in lime juice and chopped cilantro. Adjust seasoning if necessary.

Serve the Moqueca

Serve the stew hot over a bed of Brazilian rice with warm baguette slices spread with butter.
