Custard Ingredients

Method

Custard Preparation Steps

  1. 1

    Soak the Tapioca Pearls

In a medium bowl, soak the tapioca pearls in enough water to cover them. Let them sit for about 30 minutes until they soften.

  2. 2

    Prepare the Milk Mixture

In a saucepan, combine the milk and sugar. Heat over medium heat until the sugar dissolves and the milk is warm, but do not bring it to a boil.

  3. 3

    Beat the Eggs

In a separate bowl, whisk together the eggs, vanilla extract, and salt until well combined.

  4. 4

    Combine Mixtures

Once the milk is warm, gradually pour a small amount of the warm milk mixture into the egg mixture while whisking continuously to temper the eggs. This prevents them from scrambling.

  5. 5

    Add Tapioca Pearls

After tempering the eggs, add the soaked tapioca pearls to the egg mixture and mix thoroughly.

  6. 6

    Bake the Custard

Preheat your oven to 350°F (175°C). Grease a baking dish with butter. Pour the custard mixture into the prepared baking dish. Place the baking dish in a larger pan filled with water (water bath) to ensure even cooking.

  7. 7

    Cooking Time

Bake in the preheated oven for about 45-50 minutes, or until the custard is set and a knife inserted in the center comes out clean.

  8. 8

    Cool and Serve

Remove the custard from the oven and let it cool for at least 15 minutes. Serve warm or chilled, as desired.
