Start by preheating your oven to 375°F (190°C). While the oven is heating, take the Medjool dates and carefully make a slit along one side of each date. Remove the pit and set the dates aside.

In a skillet over medium heat, add the Spanish chorizo. Cook for about 5-7 minutes, breaking it up with a spatula until it is nicely browned and cooked through. Remove from heat and let it cool for a few minutes.
