    Prepare the Pork Loin

    Start by preheating your smoker to 225°F (107°C).

    Season the Pork

    Rub the olive oil all over the pork loin. In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder. Season the pork loin evenly with this mixture.

    Smoke the Pork

    Place the seasoned pork loin in the smoker and smoke for about 2 to 3 hours, or until the internal temperature reaches 145°F (63°C). Remove from the smoker and let it rest for 10-15 minutes before slicing.

BBQ Beans

    In a medium saucepan, combine the drained navy beans, BBQ sauce, brown sugar, diced onion, mustard, and apple cider vinegar.

    Heat the mixture over medium heat until it begins to simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally. Season with salt and pepper to taste.

Fennel Gremolata

    In a bowl, combine the finely chopped fennel bulb, parsley, lemon zest, and minced garlic. Drizzle with olive oil and season with salt to taste.
