Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, ensuring you do not cut into the meat. This will help the fat render and the skin crisp up.

Season the Pork Belly
Rub the pork belly generously with salt and black pepper. Then, coat the scored skin with half of the gochujang marinade.

Roast the Pork Belly
Place the pork belly on a roasting pan, skin side up. Roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy.

Baste with Marinade
Halfway through the cooking time, brush the pork belly with the remaining marinade to enhance flavor.

Finish and Serve
Once cooked, remove the pork belly from the oven and let it rest for 10 minutes. Slice into pieces and serve with lemon wedges.
