Burnt Orange Marmalade

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs and then add the buttermilk, vegetable oil, orange zest, miso paste, and vanilla extract. Mix until smooth.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cake

    Once baked, remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

    Slice the oranges into thin rounds, removing any seeds.

    In a saucepan, combine the sliced oranges, sugar, and water. Bring to a boil, then reduce heat and let it simmer for 45-60 minutes, stirring occasionally, until thickened.

    Add Lemon Juice

    Stir in the lemon juice and cook for an additional 10 minutes. Remove from heat and let it cool.

    Prepare the Blood Oranges

    Juice the blood oranges and strain the juice to remove any pulp or seeds.

    Cook the Gastrique

    In a saucepan, combine the blood orange juice, sugar, and white vinegar. Bring to a boil and then simmer until reduced by half, about 15-20 minutes.

    Remove from heat and allow to cool before serving.
