Salad Preparation

Prepare the Kale
Wash the kale leaves thoroughly under cold water. Remove the tough stems from the kale and tear the leaves into bite-sized pieces.

Make the Dressing
In a small bowl, whisk together the lemon juice, olive oil, minced garlic clove, salt, and black pepper until well combined.

Combine Ingredients
In a large salad bowl, add the torn kale leaves. Pour the dressing over the kale and toss well to ensure all the leaves are coated.

Add Parmesan
Grate the Parmesan cheese and add it to the salad. Toss again to combine.

Prepare Crispy Garbanzo Beans
If using canned garbanzo beans, drain and rinse them. Pat them dry with a paper towel. In a skillet over medium heat, add a tablespoon of olive oil and the dried garbanzo beans. Cook, stirring occasionally, until golden brown and crispy, about 8-10 minutes.

Top the kale Caesar salad with the crispy garbanzo beans. Serve immediately and enjoy!
