Focaccia Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a rough dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

    Rise the Dough

    Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Grilling the Focaccia

    Prepare the Griddle

    Preheat a griddle or large skillet over medium heat and brush it with olive oil.

    Shape the Focaccia

    Once the dough has risen, punch it down and transfer it to a floured surface. Press it out into a rectangle about 1 inch thick.

    Cook the Focaccia

    Carefully place the dough on the hot griddle. Cover and cook for about 5-7 minutes on one side until golden brown. Flip and cook for another 5-7 minutes on the other side.

    Add Toppings

    During the last few minutes of cooking, drizzle olive oil on top, sprinkle with sea salt and fresh rosemary if desired.

    Remove from heat, let it cool slightly, then slice and serve with butter and jam on the side.
