Foie Gras Mousse

Prepare the Foie Gras
In a large bowl, soak the foie gras in cognac for 1 hour. Remove and drain excess liquid.

Blend the Mousse
In a food processor, combine the foie gras, butter, shallots, salt, and white pepper. Blend until smooth.

Add Cream
Slowly add the heavy cream while blending until the mixture is light and airy. Adjust seasoning if necessary.

Chill
Transfer the mousse to a serving dish and refrigerate for at least 4 hours or until set.

Add Broth and Clams
Pour in the broth, add the diced clams, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce to a simmer.

Stir in Cream
After 20 minutes of simmering, stir in the heavy cream and cook for another 10 minutes.

Remove Bay Leaf
Remove the bay leaf. Adjust seasoning if necessary.
Brown Bread

Preheat Oven
Preheat your oven to 180°C (350°F).

Mix Dry Ingredients
In a mixing bowl, combine whole wheat flour, all-purpose flour, brown sugar, baking soda, and salt.

Add Buttermilk
Pour in the buttermilk and mix until just combined. Do not overmix.

Pour the batter into a greased loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.

Let the bread cool for 10 minutes in the pan before transferring to a wire rack.
Pear Chutney

In a saucepan, combine the diced pears, brown sugar, apple cider vinegar, ginger, cinnamon, and salt.

Bring to a boil, then reduce to a simmer and cook for 30 minutes or until thickened.

Remove from heat and let cool before serving. Blend if a smoother texture is desired.
Granola

Preheat your oven to 160°C (320°F).

Spread the mixture evenly on a baking sheet and bake for 20-25 minutes, stirring halfway through.

Let the granola cool completely before storing it in an airtight container.
