    Prepare the Fennel

    Trim the fennel bulb by removing the fronds and the base. Cut it in half and slice it thinly. Place the sliced fennel in a bowl.

    Sauté the Fennel

    Heat the olive oil in a skillet over medium heat. Add the sliced fennel and season with salt and black pepper. Sauté for about 5-7 minutes until the fennel is tender and slightly caramelized. Remove from heat and let cool.

    Prepare the Tartlette Base

    Preheat your oven to 375°F (190°C). Roll out your tartlette pastry and fit it into a tartlette pan. Prick the bottom with a fork and place it in the fridge to chill while you prepare the filling.

    In a mixing bowl, combine the goat cheese, eggs, heavy cream, fresh thyme, and sautéed fennel. Mix until smooth and well combined. Season with additional salt and pepper to taste.

    Remove the chilled tartlette base from the fridge and pour the filling mixture into it, spreading it evenly.
