Method

Date Caramel

  1. 1

    Prepare the Date Caramel

In a saucepan, combine the chopped dates and water. Bring to a simmer over medium heat, stirring occasionally.

  2. 2

Once the mixture is simmering, reduce the heat to low and continue to cook for about 10-15 minutes until the dates are soft.

  3. 3

Remove from heat and stir in the vanilla extract. Blend the mixture using an immersion blender or transfer to a blender until smooth. Set aside.

Toasted Focaccia

  1. 4

    Toast the Focaccia

Preheat your oven to 400°F (200°C).

  2. 5

Slice the focaccia loaf into pieces about 1 inch thick.

  3. 6

Brush both sides of the slices with olive oil and sprinkle with sea salt.

  4. 7

Place the slices on a baking sheet and toast in the oven for about 10-12 minutes, or until golden brown and crispy.

Pickled Pears

  1. 8

    Pickle the Pears

In a medium saucepan, combine white vinegar, water, sugar, and salt. Bring to a gentle boil.

  2. 9

Add the sliced pears, whole cloves, and cinnamon stick to the boiling mixture.

  3. 10

Reduce heat and let simmer for 5-7 minutes until pears are tender but not mushy.

  4. 11

Remove from heat and let cool. Transfer to a jar and refrigerate for at least 1 hour before serving.

Assemble the Dish

  1. 12

    Serve the Comte Cheese

On a serving platter, arrange the toasted focaccia slices.

  2. 13

Top each slice with a generous spoonful of date caramel and a slice of Comte cheese.

  3. 14

Add pickled pears on the side or on top of the cheese for a delicious contrast.

  4. 15

Enjoy your Comte cheese with date caramel, toasted focaccia, and pickled pears!
