Prepare vegetables
Wash and thoroughly dry the field greens using a salad spinner or clean kitchen towel. Trim carrot ends, then julienne or shred to measure 1 cup. Trim and thinly slice the radishes. Peel (optional) and thinly slice the cucumber into rounds or half-moons. Cut the tomato into wedges or large dice and drain any excess seeds/juice on a paper towel to prevent watering down the salad.
Combine the prepared greens, carrots, radishes, cucumber, and tomato in a large bowl. Toss gently to distribute ingredients evenly.
Crumble the goat cheese over the salad just before serving so it remains slightly textured and creamy in bites.
If using optional toasted nuts and fresh herbs, sprinkle them on top along with the goat cheese.
Honey Vinaigrette
Emulsify dressing
In a small bowl or jar combine the apple cider vinegar, Dijon mustard, honey, and lemon juice. Whisk or shake until honey is dissolved. Slowly stream in the extra-virgin olive oil while whisking vigorously (or add oil to jar and shake) to form an emulsion. Season with the salt and freshly ground black pepper and taste; adjust seasoning with additional honey for sweetness or vinegar for brightness.
If dressing sits for a few minutes, re-whisk or shake before using to re-emulsify.
Dress the salad lightly: start with about 2 tablespoons of dressing for the whole salad, toss gently, and add more if desired. Be cautious — you can always add more but can't remove excess.
To serve
Transfer tossed salad to serving plates or a large platter. Finish with any remaining goat cheese crumbles, a light drizzle of leftover vinaigrette if needed, and a final crack of black pepper.
Serve immediately so greens remain crisp.
