Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly and mix it with rice vinegar, mirin, and a pinch of salt.

Prepare the Fish and Vegetables

Slice the fresh fish into thin sashimi-style pieces. Julienne the cucumbers and avocados.

Assemble the Sushi Rolls

Lay a nori sheet on a bamboo mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place slices of fish and vegetables in a line across the center of the rice. Roll the nori tightly from the bottom up, sealing the edge with a little water.

Cut and Serve

Using a sharp knife, slice the roll into bite-sized pieces. Arrange on a plate and garnish with sesame seeds, pickled ginger, and daikon radish. Serve with soy sauce and wasabi on the side.

Prepare Seaweed Salad

In a separate bowl, serve the seaweed salad as a refreshing side dish.
