Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and let it cool slightly.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour the mixture over the warm rice and gently fold it in using a spatula. Allow the rice to cool to room temperature.

Prepare Fillings

Slice the sashimi-grade fish into small pieces. Julienne the cucumber and avocado into thin strips.

Form Temari Sushi

Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and flatten it in your palm. Place a piece of fish and a few strips of cucumber and avocado in the center. Mold the rice around the filling to form a ball. Repeat with the remaining ingredients.

Garnish and Serve

Cut the nori sheets into thin strips. Wrap a strip around each temari sushi ball. Sprinkle with sesame seeds and serve with soy sauce, wasabi, and pickled ginger on the side.
