Prepare Sushi Rice

1. Rinse and Cook Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot, bring to a boil, then reduce to a simmer and cover for 15 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

2. Season Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the cooked rice using a wooden spatula. Allow to cool to room temperature.

Prepare Toppings

3. Slice Fish and Avocado

Thinly slice the salmon and tuna fillets. Cut the avocado in half, remove the pit, and slice it thinly. Chop scallions into small pieces.

4. Prepare Nori

Cut nori sheets in half to create rectangles suitable for sushi. Toast them lightly over an open flame for added flavor.

Assemble Aburi

5. Form Sushi

With wet hands, take a small amount of sushi rice and form it into an oval shape. Place a slice of fish or avocado on top of the rice.

6. Torch the Fish

Using a culinary torch, lightly sear the fish on top until it is slightly charred. Be careful to not overcook.

7. Garnish and Serve

Sprinkle sesame seeds and chopped scallions over the top. Serve with soy sauce and wasabi on the side.
