Prep

    Gather and measure

    Crack 4 large eggs into a medium mixing bowl. Measure 2 tablespoons of whole milk and have butter and seasonings ready. If using chives, thinly slice and set aside.

    Whisk eggs and milk together vigorously until yolks and whites are completely combined and mixture is slightly frothy. This incorporates air for a tender scramble.

    Season the egg mixture with 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper and whisk briefly to distribute. (Reserve remaining salt and pepper for finishing to taste.)

Cook

    Heat pan

    Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt gently until it foams but does not brown (about 30–45 seconds). Swirl to coat the pan.

    Pour the whisked eggs into the pan. Let them sit undisturbed for about 10–15 seconds until the edges just begin to set.

    Using a silicone spatula, gently push the eggs from the edges toward the center in slow folding motions, allowing uncooked egg to flow to the pan surface. Continue this folding and resting cycle, keeping the heat at medium-low so the eggs cook slowly and remain tender. Total cooking time should be about 2–3 minutes.

    When the eggs are mostly set but still slightly glossy and moist (they will continue to cook from residual heat), remove the pan from the heat. Taste and season with the remaining salt and pepper as needed.

    If desired, stir in the chopped chives off the heat to finish.

Serve

    Transfer scrambled eggs to plates immediately to prevent overcooking. Serve with 2 pieces of toast or warm tortillas and hot sauce or salsa on the side if you like.
