Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon oil and let it warm until shimmering but not smoking.

Add the sliced hot dog sausages in a single layer and cook, stirring occasionally, 3–4 minutes until edges brown and they render some fat. If using lean sausages, cook until they have some golden color.

Taste and adjust seasoning: add a little more salt or pepper if desired. Reduce heat to low–medium to prepare for the eggs.

In a medium bowl, crack 6 eggs. Add 2 tablespoons milk (or water) and the measured salt and black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy — this yields tender scrambled eggs.

Using a flexible spatula, gently push eggs from the edges toward the center, allowing uncooked egg to flow underneath. Continue gently folding and moving the eggs every 10–15 seconds to form soft, creamy curds. Total cooking time for the eggs should be about 2–4 minutes depending on desired doneness. Avoid overcooking: remove from heat when eggs are slightly less set than you want; residual heat will finish them.

Warm tortillas in a dry skillet for 20–30 seconds per side or wrap in a clean towel and microwave 20–30 seconds until pliable.

Spoon generous portions of the scrambled eggs with sausages onto warm tortillas. Serve with salsa roja or hot sauce on the side and refried or black beans if desired. Offer extra chopped cilantro, lime wedges, or crumbled queso fresco as optional garnishes.

Serve immediately while hot. Leftovers can be refrigerated in an airtight container for up to 2 days and gently reheated over low heat with a splash of water to restore moisture.
