Longaniza and aromatics

    Prepare longaniza

    Remove longaniza from casings by slicing lengthwise and scraping or squeezing meat into a bowl. Break up any large clumps with a fork so it will crumble evenly when cooked.

    Heat a large nonstick or heavy skillet over medium heat. Add vegetable oil or lard (1 tbs) and swirl to coat. When hot, add the longaniza to the pan and spread into an even layer.

    Cook, stirring and breaking it into small pieces with a spatula, until fully browned and cooked through, about 6–8 minutes. If the longaniza releases a lot of fat, tilt the pan and spoon off excess, leaving enough to coat the pan (about 1–2 tbs) for flavor.

    Add the chopped onion and chopped chile to the pan with the longaniza. Cook, stirring, until the onion is soft and translucent, about 3–4 minutes. Stir in the minced garlic and cook 30–45 seconds more until fragrant. Reduce heat to low–medium so eggs won’t overcook when added.

Eggs and dairy

    In a medium bowl, crack the eggs (6) and add the milk or crema (3 tbs) if using. Season with 1/2 tsp kosher salt and 1/8 tsp black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy—this yields creamier, fluffier eggs.

    Push the longaniza mixture to one side of the skillet or transfer it to a warm plate leaving about 8–10 inches of free pan surface. Add the butter (1 tbs) to the empty area of the skillet and let it melt over low–medium heat, swirling to coat.

    Pour the beaten eggs into the buttered area. Let the eggs sit without stirring for about 10–15 seconds until edges begin to set. Using a heatproof spatula, gently pull the set edges toward the center, tilting the pan to allow uncooked egg to run to the edges. Continue folding gently in large soft curds until eggs are mostly set but still slightly glossy, about 1–2 minutes total.

    When eggs are almost done but still a touch undercooked, fold the longaniza and onion mixture back into the eggs until evenly distributed. Remove skillet from heat—the residual heat will finish cooking the eggs and prevent overcooking.

Seasoning and garnish

    Taste a small bite and adjust seasoning: sprinkle the remaining 1/4 tsp kosher salt and additional black pepper to taste if needed. Fold in chopped cilantro (2 tbs) and, if using, crumble queso fresco or cotija over the top.

    Transfer huevos revueltos con longaniza to a warm serving plate or keep in the skillet set on the lowest heat. Serve immediately with lime wedges, warm tortillas, beans, and salsa as desired.

To serve (optional)

    Warm tortillas in a dry skillet or wrapped in a towel in the oven for a few minutes. Spoon eggs and longaniza into tortillas to make tacos, or serve alongside refried beans and salsa. Squeeze lime over eggs just before eating for brightness.
