    Roast and peel

    Heat a gas burner to medium-high or preheat broiler. Hold each poblano with tongs over the flame (or place on a foil-lined baking sheet under the broiler) and char the skin on all sides until blackened and blistered, about 6–10 minutes total, turning frequently. Transfer chiles to a bowl and cover tightly with plastic wrap or place in a sealed plastic bag for 10–15 minutes to steam — this loosens the skin.

    When cool enough to handle, peel off most of the charred skin with your fingers or a small knife. Try to leave the stem intact. Make a lengthwise slit down one side of each chile and gently open to remove seeds and veins using your fingers or a small spoon. Rinse briefly under running water to remove stubborn seeds, then pat dry with paper towels and lightly season inside with a pinch of salt.

    If you prefer less heat, remove the inner ribs thoroughly. Set chiles aside on a tray with the cut side up.

Filling

    Mix shredded queso fresco and Monterey Jack (if using) in a bowl. Taste and adjust ratio — queso fresco gives tang, Jack gives meltiness.

    Stuff each prepared poblano gently but firmly with about 2–2.5 oz (roughly 1/2 cup loosely packed) of the cheese mixture. Do not overfill or cheese will leak during frying. Press the filling lightly and close the chile around it; if needed, fold the edges over to help hold the cheese.

Batter (tempura-style)

    Separate eggs into two bowls: place 2 egg whites in one bowl and the remaining 1 whole egg plus the 2 yolks in another. (Alternatively, if you prefer a simpler batter, use all 3 whole eggs beaten.)

    Whisk the 2 egg whites with a pinch of salt until foamy but not stiff — about 30–60 seconds. Fold the whipped whites gently into the bowl with the whole egg(s) and yolks.

    Add the flour and cold sparkling water to the egg mixture and whisk briefly to combine. The batter should be light, slightly airy, and thick enough to coat the back of a spoon but still fluid. Keep the batter cold and use immediately for best lift.

Frying

    Pour oil into a heavy skillet or a wide saucepan to a depth of about 1 inch and heat over medium-high until it reaches 350°F (175°C) or until a pinch of batter sizzles and browns gently within 10–15 seconds. Maintain steady temperature; adjust heat as needed.

    Working one or two chiles at a time (do not overcrowd), dredge a stuffed chile lightly in a thin dusting of flour (this helps the batter adhere), then dip into the batter to coat completely. Let excess batter drip off for a moment.

    Carefully lower the battered chile into the hot oil. Fry until golden and crisp on the first side, about 2–3 minutes, then carefully flip with tongs or a slotted spatula and fry the other side another 2–3 minutes. If using two chiles at once, monitor spacing to avoid touching. Total fry time should be about 4–6 minutes per chile until evenly golden and the cheese inside is melted.

    Remove chiles to a wire rack set over a baking sheet or to paper towels to drain briefly. If frying in batches, keep finished chiles in a warm (200°F / 95°C) oven on a rack so they stay crisp while you finish remaining chiles.

To serve

    Warm salsa roja or ranchera if using. Place a chile on each plate, spoon about 1/4 cup warm salsa over (or serve on the side), sprinkle with chopped cilantro and serve with lime wedges. Serve immediately while crisp.

    Optional: For a lighter presentation, drain extra oil by resting chiles on paper towels briefly, then transfer to plates. Enjoy the chile relleno solo (cheese-stuffed chile only) as a main with rice and beans or as a hearty appetizer.
