Preparation and Cooking

    Prepare the Sweet Potato Gnocchi

    Boil the sweet potatoes until tender. Drain and mash them in a bowl. Let cool slightly, then mix in the flour, egg, and salt until a dough forms. Roll the dough into long ropes and cut into small pieces to form gnocchi.

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Drop the gnocchi into the water and cook until they float to the top, about 2-3 minutes. Remove them with a slotted spoon and set aside.

    Prepare the Brussel Sprouts

    Trim and halve the brussel sprouts. In a pan, melt 2 tablespoons of butter over medium heat. Add the brussel sprouts and sauté until they are golden brown and tender, about 8-10 minutes. Season with salt and pepper.

    Brown the Butter

    In a separate pan, melt the remaining butter over medium heat until it turns golden brown and has a nutty aroma. Be careful not to burn it.

    Combine and Serve

    In a large serving bowl, combine the cooked gnocchi, sautéed brussel sprouts, crumbled boudin, and brown butter. Toss gently to combine. Top with grated parmesan cheese and season with black pepper to taste.
